A Quick and Easy Winter Supper

This winter, try this delicious hotpot and follow it with a delicious Sunny D trifle! Both dishes can be made in advance.

Bean and Sausage Hotpot (serves 4-6)

This is quick and easy, and can be made in one pot, which saves on the washing up!

You will need:

  • 1 tbsp oil
  • 8 pork sausages
  • 2 leeks, sliced
  • 2 x 400g tins of tomatoes
  • 1 tbsp tomato puree
  • 500ml beef or vegetable stock, or a stock cube
  • 200g mushrooms, sliced
  • 1 x 400g tin canellinni beans
  • 1 x 400g tin kidney beans

What to do:

  • Heat the oil in a large saucepan, add the sausages and fry gently for 5-10 minutes until the sausages are half cooked.
  • Take the sausages out of the pan and put them on a plate. When they are cool enough, cut into thick prices.
  • Add the leeks to the pan and fry gently until soft.
  • Stir in the tomatoes, tomato puree, and mushrooms, and simmer for 5 minutes.
  • Add the stock, or 500ml water and the stock cube.
  • Return the sausages to the pan and simmer for 10 minutes or until the sausages are completely cooked through.

If you are serving it straight away:

Add the cannellini beans and kidney beans. Bring to the boil and heat the beans through. Serve with crusty bread.

If you are making it in advance:

Leave to cool then put in the fridge. When you are ready to serve, bring the hotpot to a simmer on a gentle heat. Cook gently until sausages are hot. Add the beans, bring to the boil and heat until piping hot. Serve with crusty bread.

Boodles Orange Fool

This is a delicious and very easy pudding that tastes even better if it's made in advance, and left for the flavours to develop.

You will need:

  • 12 sponge fingers
  • 100ml Sunny D orange
  • 300ml double cream

What to do:

  • Line a trifle dish or a bowl with the sponge fingers.
  • Whip the cream until it just starts to thicken, then slowly add the Sunny D, whipping as you add it.
  • Pour the cream over the sponge fingers, making sure you fill in all the gaps.
  • Put in the fridge for at least 2 hours but overnight is best! The orange cream will soak into the sponge fingers.
  • Decorate the top with crystallised orange pieces if you have them.
