Treat your mum (or yourself) this Mother’s Day with our delicious cupcake recipe.

Basic Cupcake Recipe

A simple recipe that allows for endless variations.

You will need:

  • 100g/4oz butter, softened to room temperature, or margarine
  • 100g/4oz sugar
  • 2 eggs, lightly beaten
  • 100g/4oz self-raising flour
  • 1 – 2 tbsp milk
  • flavourings (optional)
  • 12-hole muffin tray
  • 12 paper cupcake cases

For buttercream icing

  • 100g/4oz butter, softened to room temperature, or margarine
  • 225g/7oz icing sugar, sieved
  • 2-3 drops food colouring (optional)
  • flavourings (optional)

What to do:

  • Preheat the oven to 180C/350F/Gas 4
  • Line 12-hole muffin tray with the cupcake cases
  • Cream butter and sugar together till soft and fluffy, and pale in colour
  • Beat in the eggs a little at a time
  • Fold in the flour using a metal spoon
  • Add your flavourings at this point
  • Add some of the milk to make a soft dropping consistency
  • Divide the mixture between the paper cases
  • Cook for 10-15 minutes, til light brown on top. Insert a skewer to test if done. The skewer should come out clean. The surface will spring back if gently pressed down.
  • Leave to cool in the tray for 15 minutes then take out and cool on a wire rack.
  • Make the buttercream by beating together the butter and icing sugar. Add optional food colouring and flavourings.
  • Use a knife or piping bag to decorate the top of the cupcakes.


Five ideas for cute Mother’s Day cupcakes 

Sunny D Orange Cupcakes

Add 2 tbsp Sunny D to the cupcake mixture and the buttercream. Sprinkle the top with orange zest or decorate with crystallized orange pieces. 

Death by Chocolate Cupcakes

Add 2 tbsp cocoa powder and 2 tbsp chocolate chips to the cupcake mixture. Stir 1 tbsp cocoa powder or 50g melted chocolate into the buttercream. Decorate with chocolate sprinkles.

Red Velvet Cupcakes

Add 2 tbsp cocoa power and 4 drops red food colouring to the cupcake mixture. For the buttercream, replace 50g of the butter with cream cheese and add 1 – 2 drops of red food colouring. Decorate with red sprinkles.

Apple Toffee Cupcakes

Use dark brown sugar instead of white sugar in the cupcake mixture, and add one large apple, peeled and grated. For the buttercream, add 1 tbsp of homemade or ready-made toffee sauce.

Coconut and Key Lime Cupcakes

Replace 30g of flour with desiccated coconut. For the buttercream, add 1 tbsp desiccated coconut plus the zest and juice of 1 lime. Decorate with more lime zest.
