Quick and Easy Spring Salads

Salad in the springtime! The Sunny-D has come up with two delicious and easy salads that are great for this time of year. Best drunk with a delicious glass of chilled Sunny-D.

Chilli Sweet Potato, Spinach & Mackerel

A simple warm salad with a lovely orange-flavoured dressing that perfectly complements the roasted sweet potato. It is substantial enough to eat on its own and also goes well with the coleslaw below. Serves 6.

You will need:

  • 3 large sweet potatoes
  • 2 tbsp olive oil or other oil
  • a large pinch of dried chilli
  • 2 tbsps Sunny-D Florida
  • ½ tsp mustard
  • 3 large handfuls baby spinach leaves (or other salad leaves)
  • 2 fillets of smoked mackerel

What to do:

  • Heat the oven to 180C.
  • Peel the sweet potato and chop into large chunks. Place on a baking tray.
  • Add 1 tsbsp of oil, dried chilli, and salt and pepper, and mix to coat the potato well. Cook for 20-30 minutes, shaking a couple of times to stop it sticking, until the potatoes is soft and turning crispy round the edges.
  • Meanwhile make the salad dressing. In the bottom of a large bowl, mix 1 tbsp of oil, the Sunny-D Orange and mustard. Season with a little salt.
  • Peel the skin away from the smoked mackerel and break into pieces.
  • When the potatoes are cooked, tip them into the bowl. Add the washed spinach leaves and smoked mackerel. Stir briefly to coat the leaves in dressing and serve.


Recipes Coleslaw

Easy Multi-Coloured Coleslaw

This take on traditional coleslaw uses three different kinds of cabbage for maximum colour effect! Serves 6 as a side dish.

You will need:

  • 300g dark green cabbage
  • 300g white cabbage
  • 300g red cabbage
  • large bunch of parsley
  • 2 tbsps mayonnaise
  • 2 tbsps plain yoghurt
  • juice and zest of 1 lemon
  • 1 heaped tsp mustard
  • 2 tbsps capers

What to do:

  • Finely chop or grate the cabbage (or use a food processor).
  • Finely chop the parsley.
  • In a large bowl, mix the mayonnaise, yoghurt, lemon juice, and mustard. Season with salt and pepper.
  • Add the cabbage and stir very well.
  • Add the capers and the parsley, stir well, and serve.
