Soda Bread

Makes: 1 loaf

You will need:

  • 400g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 1 tsp caster sugar
  • 350 ml buttermilk (see tips)

What to do:

  • Preheat oven to 200C, Gas 6.  Lightly flour a baking sheet.
  • Place all the dry ingredients into a mixing bowl and mix well. Make a well in the centre and add all but the 2 tbsp of the buttermilk. Combine the ingredients with a fork to form a soft dough. If the mixture is too dry add a little more of the butter milk.
  • Turn out onto a lightly floured surface and knead very lightly. Shape into a round and flatten slightly to about 4cm deep. Place onto the baking sheet and using a sharp knife make a deep cross in the top.
  • Bake in the oven for 35 mins or until the bread sounds hollow when tapped on the base. Transfer to a cooling rack to cool slightly. Serve warm with butter. 

Handy tips:

  • You will find buttermilk in most major supermarkets and health food shops.
  • For a quick alternative for buttermilk use half plain yogurt and half milk mixed together.
  • Sour dough bread is best eaten on the day it is made. If you happen to have any left over it is delicious toasted the next day.
