Sunshine glass window gingerbread and Gingerbread men

Basic gingerbread dough:

You will need:

  • 350g plain flour
  • 1 tsp bicarbonate of soda
  • 2 tsp ground ginger
  • 100g butter, chilled and cubed
  • 175g light soft brown sugar
  • 1 egg
  • 4 tbsp golden syrup

What to do:

  • Sift the flour, bicarbonate of soda and ground ginger into a mixing bowl. Add the butter and using your fingers rub in until mixture resembles fine bread crumbs. Alternatively,  pulse in a food processor for a few seconds.
  • Stir in the sugar. Mix the egg and golden syrup together then stir into the flour mixture. Using your hands mix together to form a dough.
  • Use on the following recipes.

 

Gingerbread Men 

Makes: approx 28
Prep: 10 mins + decorating
Cook: 10-12 mins

You will need:

  • 1 x quantity basic gingerbread dough
  • Gingerbread men cutters
  • Baking trays lined with baking parchment Icing and edible decorations

 

What to do:

  • Preheat oven to 190C, Gas 5. Roll out the dough on a lightly floured surface to about 5mm in thickness.
  • Stamp out gingerbread men shapes using the cutters and place onto baking trays. Re-roll and repeat until all the dough has been used.
  • Bake in oven for 10-12 mins. Leave to cool on tray.
  • Decorate with icing and edible decorations.

  

Sunshine glass ginger biscuits

Makes: approx 24
Prep: 15 mins
Cook: 10-12 mins

You will need:

  • 1 x quantity basic gingerbread dough
  • 24 boiled fruit sweets
  • Baking trays lined with baking parchment Selection of cutters Coloured string or thin ribbon

 

What to do:

  • Pre-heat oven to 190C, Gas 5. Roll out the dough on a lightly floured surface to about 5 mm in thickness.
  • Stamp out shapes and place onto baking trays. Using a smaller cutter stamp out the centre. Using a straw or a skewer make a hole in the top for the string or ribbon.
  • Place a boiled sweet in the centre of each hole.
  • Bake in oven for 10-12 mins. Leave to completely cool on trays.
  • Remove from trays then carefully thread through string or ribbons and tie.

Handy tip

  • These biscuits will keep for a couple of days layered with greaseproof paper and stored in an airtight container.
