Orange & Blueberry Pancakes

These yummy pancakes are great as a weekend treat. Serve with fresh fruit, yoghurt or maple syrup, and a glass of Sunny D. Makes 10 pancakes.

You will need:

  • 300g plain flour
  • ½ tsp salt
  • 1 tsp baking powder
  • 3 large eggs
  • 75ml milk
  • 75ml Sunny-D orange
  • a handful of frozen blueberries
  • 25g butter

What to do:

  • Mix the ground almonds, salt, and baking powder in a large bowl.
  • Make a well in the centre and add the eggs and milk.
  • Gradtually mix the wet and dry ingredients until you have a thick but pourable batter.
  • Gently stir in the blueberries.
  • Warm a frying pan over a medium heat and melt half of the butter.
  • Pour a couple of tablespoons of batter onto the pan. Cook for 2-3 minutes or until bubbles are formed then flip the pancake and cook for 1-2 minutes on the other side.
  • Serve immediately, or keep warm on a plate until required. Continue to make pancakes until all the batter is used up. You may need to melt a little more butter.

Orange and Strawberry Smoothie

Whizz up frozen strawberries, Sunny D orange and natural yoghurt. This creamy smoothie gives you the zip you need in the morning, not to mention getting the vitamins in. Makes 2 smoothies.

You will need:

  • 100g frozen strawberries
  • 125ml Sunny D orange
  • 75g natural yoghurt

What to do:

  • place all ingredients in a liquidiser or blender
  • whizz up for 1-2 minutes
  • pour into two glasses and enjoy.
